Sweet Polenta Little Cakes Recipe
Makes 10
120 g / 3/4 C. Polenta, fine texture
80 g / 1/2 C. Self-raising flour
2/3 C. Soft brown sugar
Pinch of Salt
80 g / 1/2 C. Self-raising flour
2/3 C. Soft brown sugar
Pinch of Salt
2 Eggs
150 g / 1/2 C. Milk
1 Tbsp. Lemon zest
2 Tbsp. Canola oil
1/4 C. Sunflower seeds
150 g / 1/2 C. Milk
1 Tbsp. Lemon zest
2 Tbsp. Canola oil
1/4 C. Sunflower seeds
Preparation:
Preheat oven at 200 C/ 400 F and butter muffin pan.
In a medium bowl add all dry ingredients. Mix. Then add milk, oil, eggs and mix all ingredients until well combined. Divide mixture into prepared muffin pan. Bake for 18-20 minutes or until muffin turns golden brown.
Nom Nom... polenta in the form of a Muffin! This sounds so delish!
