Well, since I was writing about Argentinean Food the other day, I thought it might be nice to share some "Argentinean Recipes" too. I hope you like it!
MILANESA RECIPE 'ARGENTINIAN STYLE'
Milanesa de Carne/ Beef Schnitzel / Breaded Sirloin
900 gr / 8 slices approx. of Beef schnitzel, boneless beef steaks Top Sirloin Sliced Thin-(*tips below) (about 1-1/2 of an inch thick)
3 eggs
2 Tbsp fresh parsley, finely chopped
½ tsp minced garlic
1 tsp salt
½ tsp ground cumin
Vegetable oil, 1 C. approx.
3 C. Plain breadcrumbs
Preparation:
In a shallow bowl whisk the eggs. Then add the parsley, garlic, cumin and salt. Mix all ingredients. Set aside. Dip beef / steak in marinade mixture and mix it thoroughly. Cover and refrigerate for about 1 hour. When ready put plain bread crumbs in a pan and using a fork take one marinated beef / steak at a time and coat it with the breadcrumbs. Coat well.
Preheat a skillet with about 1 cup of vegetable oil over medium-high heat. Fry each milanesa for about 2 minutes each side or until golden brown. Keep in mind the thinner the beef the quicker the frying. Use a few paper towels to drain the oil.
HOW TO COOK + EAT MILANESA 'ARGENTINIAN STYLE'
Meat Preparation:
(*)If you can not get the slices that thin, you can pound the steaks with a meat hammer by putting the steak in between plastic wrap and beating each slice with the meat hammer until the appropriate thickness
Cut the fat off (any flat veins) of the steaks so when frying the Milanesa will stay flat.
You can also make Milanesas de Pollo/ Chicken milanesas using chicken breasts and repeating the same process as beef milanesas.
Cooking Alternatives:
You can eat the Milanese the same day or freeze them and cooked them during the week or when desire. If you freeze the cutlets I recommend putting wax paper between them.
You can either cook the Milanese in vegetable oil or for a less fat cooking version, bake them in the oven, using just a little bit of vegetable oil or olive oil for greasing the pan.
