Today I bring you three recipes, very hearty and also very delicious! Homemade fresh pasta with béchamel Sauce and artisan bread-sticks.The perfect meal for a Saturday night! Hope Everyone is having a good week!
HOMEMADE PASTA DOUGH RECIPE
Serves 4/ makes 600 g /21 oz of pasta
300 g / 10 oz All- Purpose flour
100 g / 4 oz Semolina
4 Medium eggs or 3 large
Preparation:
Making the Pasta:
1- Pour flour onto a clean surface. And form a well large enough to hold the eggs. Crack the eggs one by one into the well and beat lightly with a fork. Begin drawing in small amounts of flour from the inside and mixing –at the same time—to incorporate all the flour. Continue until all the flour is incorporated.
2- When the mixture is thick enough, gently start making the dough. Clean surface and knead the dough for about 10-15 minutes until dough becomes smooth and elastic.Wrap in plastic wrap and leave the dough to rest –at room temperature—for 30 minutes.
3- When ready flatten the dough just using your palms. And add a little bit of flour on both sides. Cut the dough in half and pass it through the widest setting on the machine. After this, set the machine on loop number 1. Pass the dough through the machine. Repeat 3 times. Now begin rolling on decreasing settings; 2, 3 and continue until number 7. Now using the cutters provide for the pasta machine. Cut the pasta into desired shape. In this case I use the fettuccine cutter.
Now, How to cook the pasta:
Let
the fettuccine pasta dry for 15-20 minutes before cooking. To cook
simply boil water and add a little bit of salt. Cook pasta for about 3
minutes.And ready!
In this occasion I'm serving the fettuccine with Béchamel sauce, Sauté yellow peppers, fresh parsley and a lot of Parmesan cheese.
BECHAMEL SAUCE RECIPE
50 g / 2 oz Butter
2 Tbsp. Cornstarch
1 ½ C. Milk
1 tsp. Ground nutmeg
¼ tsp. Salt
¼ C. Parmesan cheese
Preparation:
In a medium saucepan melt the butter over medium heat. Meanwhile take a measuring cup add the cornstarch and milk. Using a fork mix well until cornstarch is dissolve. Using a whisk add milk gradually into the butter--Stirring constantly--. Cook for a couple of minutes, until sauce start to thicken. Add salt, nutmeg and parmesan cheese.

BREAD- STICKS RECIPE
Makes 6
1 1/3 C. Flour
1 tsp. salt
1 tsp. oil
½ C. warm water
1 tsp. Dry yeast
½ tsp. Sugar
2 Tbsp. flour
Garlic salt
Preparation:
Take a measuring cup and fill with the water. Add the yeast, sugar, and 2 tbsp. Mix well cover and leave in a warm place for 10 minutes or until bubbles appear. Sift the flour and salt and form a well. Add the yeast mixture and oil to the flour.Form a dough and knead for a couple of minutes. Place into a bowl and cover. Leave to rise for about 15 minutes or until double in size.
When ready cut dough into 6 parts and shape dough into sticks.Bake for 10-15 minutes or until lightly golden. Brush the bread-sticks with oil and sprinkle with garlic salt. Serve immediately.
